When in Rome…

The thing to definitely eat is Cacio e Pepe.   We couldn’t figure out a good bus to take there, so Sam and I walked for a couple of hours across Rome to find it.  This simple meal is just pasta with black pepper, pecorino cheese, and olive oil.  It tastes so buttery, but there isn’t any butter in it.  When I asked what gave it this taste, I was told that the fat from the cheese and the olive oil melt to make “glorious lipids.”  I agree that the taste certainly is glorious.  244
