So, inspired by a Mario Batali tweet, I decided to put together a version of Orichette and broccoli di rabe. I used TJ baby broccoli, which is pretty close. White wine and chicken broth sauce with Italian seasonings along with some garlic. I also decided to add ceci and cannellini beans.

You Put The Lime in the Coconut
subtitled: It’s not easy being green. Used coconut oil and lime on the tuna. Because, you put the lime in the coconut, and eat it all together. Harvest grains prepared in chicken broth, with pesto. As if there wasn’t enough green, how about some avocado to go with the arugula salad?
Sunday Pork Dinner
I’ve had a hankerin’ for roast pork, so today was the day. A nice TJ pork loin roast, cooked to the now reasonable and FDA approved 145F internal temperature (pink, like Aunt Anne would demand it). These are a few of my favorite things
An experiment. I know how good baked ziti is with Putttenesca sauce and fresh mozzarella balls. So, this is a variation, including blanched caulflower and sundried tomatoes. The sauce is some broth, with garlic and basil and the usual Italian seasonings. Complete with the crunchy baked noodles on top. Came out pretty good.

Healthy 8 Shrimp
A creation I conjured up, based on TJ ingredients. A bag of medium pre-cooked shrimp and a package of H8. The dressing was my creation: mayonnaise, 4 cubes frozen cilantro, juice of a lemon, salt, pepper and a bit of garlic powder. Quick and delicious. I’ll make it again.
